Recently, I had the chance to dine at Rempapa in Singapore, a place that truly celebrates a fusion of flavors. Here’s my take on this culinary gem.

Starting with their “Small Plates,” the Ayam Pelencheng was a delightful beginning. The boneless chicken leg, marinated in fresh rempah and grilled, was flavorful and tender. The Penang Lor Bak, a crispy and savory minced pork dish wrapped in bean curd skin, was another hit, offering a lovely crunch with each bite.

The Hakka Fried Pork was a standout, perfectly marinated and exploding with flavors. For salad lovers, the Papaya and Mango Salad brought a refreshing mix of sweet and tangy, topped with peanut brittle for an extra crunch.

Moving on to the “Large Plates,” the Peranakan Chap Chye was a flavorful journey in itself, with its prawn and pork broth giving a depth of flavor. The Babi Pongteh at, a braised pork dish, was a comforting choice, rich and satisfying.
